Young Melon Yellow Soup

3 tablespoons Nam Prik Kaeng Luang’ chilli paste
200 grams streaky pork with skin 1-inch thick sliced
2 cups  diced young melon
8 leaves Chinese cabbage, sectioned
cups water
2 tablespoons tamarind paste
2 tablespoons lime juice
1 tablespoon palm sugar, (or brown sugar)
¼ cup fish sauce

Boil 2½ cups of water and the chilli paste in a 2-quart container, covered, at High (600-700 Watts) for 4 minutes. Remove from the oven, add pork, young melon and Chinese cabbage to chilli soup and season with fish sauce, tamarind paste and sugar. Microwave, covered, at High for 15 minutes. Add lemon juice to produce stronger taste.

Kaeng Luang means yellow hot soup. It is a great favourite among people in the South.
