Thai Squid Salad, Larp Pla Muk
|2||(400 grams)||squids, cut into 2″x2″ pieces|
|2||shallots, thinly sliced|
|1 ½||tablespoons||lime juice|
|1||teaspoon||chopped small chillies|
|1 ½||tablespoons||golden ground rice*|
|2||tablespoons||cut, green onion|
|3||chinese cabbage leaves|
Remove head and tail from squid: discard. Remove skin, rinse and drain. Cut main section of body into 3 strips, lightly score meat lengthwise and crosswise and cut into bite-size pieces. Arrange squid in a shallow 2-quart container. Microwave, covered, at High (600700 Watts) for 3 minutes. Remove from oven and season with lime juice, chillies, fish sauce and golden ground rice. Add shallots, mint leaves and green onion to the container and toss well. Spoon on to the serving dish and serve with chinese cabbage and cow pea.
Larp : It is a spicy salad, loved by people in Issan and in the North.
Note : *Golden ground rice: This is an essential ingredient of “Larp’. Grind 2 tablespoons uncooked rice in a coffee grinder to form a fine rice semolina. Spread on a plate, microwave, uncovered, at High for 3-4 minutes.
