Thai Caramel Pork leg Recipe

½ (600 grams) pork leg
4 coriander roots
2 tablespoons crushed garlic
8 peppercorns
2 tablespoons cooking oil
1 teaspoon castor sugar
3 tablespoons fish sauce
1 tablespoons black soy sauce
1 ½ cups water
1 star of anise
1 1-cm piece cinnamon stick

Pound garlic, peppercorns and coriander roots together. Put the mixture and cooking oil into a microwave pressure cooker. Cook, uncovered, at High (600-700 Watts) for 2 minutes. Stir in the left ingredients. Microwave, covered, at High for 40 minutes. Rest for about 10 minutes to reduce pressure before uncovering.
