Sweet Sesame Balls
|⅓||cup||black sesame seeds|
|3||tablespoons||finely diced pork fat|
|350||grams||glutinous rice dough*|
Clean and drain black sesame seeds and place in a 10″ non-plastic plate. In a medium size bowl, mix black sesame seeds, icing sugar and diced fat thoroughly. Make 1 cm. size balls. Add 1 tablespoon water to rice dough and mix well. Shape portions of dough into balls the same size as sesame balls. Flatten each ball of dough and put sesame seed ball in the center. Gather edges together to seal completely, roll into a ball again. Pour 3 cups water into a 1-quart measure, cover tightly with microwave plastic wrap and microwave at High for 8 minutes. Add the stuffed glutinous rice balls to the boiling water, cook, covered, at High for 4 minutes. Remove the balls and put into cold water container. Drain the balls and float in the warm light syrup bowl before serving.
Note : Glutinous Rice Dough : soak glutinous rice in warm water for 2 hours. Drain and put into the work bowl of a high power electric blender together with 34 cup of water. Blend to produce a very fine paste. Line muslin on a metal sieve and pour in the glutinous rice paste. Tie 4 corners of muslin together and hang to drain the excess water for 6 hours
