Sweet Roasted Chilli Paste
|20||dry red chillies, seeded, sectioned|

|1||cup||ground dry shrimps|
Put sliced shallots and ½ cup cooking oil into a 4 cup glass measure. Microwave, uncovered, at High (600-700 Watts) for 7-8 minutes. Do the same with garlic but reduce the cooking time to 6-7 minutes. Drain oil from shallots and garlic. Use the oil to fry chillies at High for 2 minutes in a 4-cup glass measure, remove chillies and put into the food processor together with fried shallots, garlic and dry shrimps. Season with sugar, fish sauce and tamarind juice. Process until it becomes a very fine mixture. Pour the mixture into a medium glass mixing bowl. Microwave, uncovered, at High for 13 minutes, remove and stir once during this cooking time. Chilli paste can be used in variety dishes such as “Tom Yam” Spicy sour soup, “Pad Ped” Hot Stir fried dishes or mix with Thai salad.
Note : Tamarind paste is a well known laxative. To make this, soak 1 tablespoon ripe tamarind pulp in 4 tablespoons warm water for 5 minutes. Then squeeze and knead the tamarind to dissolve it, and strain out any seeds and fibre. It can be replaced by lemon juice.
