Sweet Loving Nest, Khanom Reh Rai

Batter

1 cup rice flour, sifted
¾ cup jasmine essence water
2 tablespoons coconut cream

Topping

¼ cup desiccated coconut
¼ cup coconut cream
¼ cup castor sugar
½ teaspoon salt
2 teaspoons roasted sesame seed, crushed

Blend rice flour and water in a medium size mixing bowl. Cook, covered, at Defrost (200 Watts) for 5 minutes. Stir once and cook, covered, at High (600-700 Watts) for 1½ minutes. Leave until not too hot. Knead in 2 tablespoons coconut cream until smooth and soft. Shape into a long roll of ½” diameter and cut into ½” thickness. Press each piece of dough through the garlic press  and transfer onto a rack of the steamer. Pour ½ cup water into the lower part of the steamer, cover, microwave at High for 2 minutes. Place the rack on which the 12 prepared dough are arranged in the steamer. Top the dough evenly with coconut cream. Cover and steam at High for 2 minutes. Arrange on the serving plate, spread coconut on top and serve with the mixture of sugar, salt and sesame seeds.
