Sweet Eggs with Young Coconut

Ingredients

3 eggs
1 fresh natural coconut juice
½ water
castor sugar
½ coconut meat

Mix together sugar, coconut juice and water in a medium size serving bowl, covered, microwave at High (600-700 Watts) for 6 minutes. Break eggs, one at a time into the bowl. Microwave, covered, at High for 1½ minutes until eggs done. Add coconut flesh. Serve hot.
