Sweet and sour Pork


200 grams pork loin (cut into bite-size pieces)
3 cups cooking oil
¼ cup Tempura flour
¼ cup water
4 teaspoons plain flour
1 teaspoon paprika
1 tablespoon chopped garlic
1 green pepper (capsicum), cut into 1 1/2″ X 1 1/2″ pieces
1 tomato, quartered
½ cup 1″x 1″ size pineapple
¼ cup sectioned green onion
¼ cup tomato sauce (ketchup)
2 teaspoons vinegar
2 tablespoons fish sauce
1 tablespoon castor sugar
1 tablespoon cornflour
¼ cup water
¼ teaspoon ground pepper

Heat 3 cups cooking oil uncovered at High (600-700 Watts.) in a 2-quart non plastic container measuring at least 3 ¼” high for 15 minutes. Do not remove the frying container from the oven. Put Tempura flour, all purpose flour and paprika into the working bowl of a food processor. Process until well mixed, during the time pour water from the upper tube. Process shortly and pour the batch into a mixing bowl. Dip pork into batter and then carefully drop into hot oil 4-6 pieces at a time. Cook, uncovered for 1 minute. Remove with a slotted spoon and place on kitchen paper to drain, set aside. Reheat oil uncovered, at High for 5 minutes between successive batches.

Dissolve cornflour with water and put all ingredients into a 2-quart flat container. Microwave, covered, at High for 3 minutes, toss well fried pork, sectioned green onion and pepper. Remove from the container and put onto the serving dish.
