Stuffed Glutinous Balls


cups glutinous’rice, soaked and drained*
½ cup jasmine essence water
cups desiccated coconut*

Blend glutinous rice and water in an electric blender to produce a very fine paste. Pour the mixture into an8″x 8″ shallow container, cover and microwave at High (600700 Watts) for 4 minutes. Leave to warm and cut into 1″ squares. Flatten each piece of glutinous rice and place a ball of sticky coconut stuffing in the middle and close up. Roll in desiccated coconut and serve.

Sticky Coconut Stuffing

1 cup shredded coconut
½ cup palm sugar or castor sugar
teaspoon salt

Mix well coconut, sugar and salt in a medium size mixing bowl. Cook covered, at High (600-700 Watts) for 4 minutes. Remove and stir. Reduce power to Medium Low (240 Watts) and cook, uncovered. for 9-10 minutes. Stir from time to time. If the coconut stuffing is too hard, add 2 tablespoons coconut milk to soften the result. The glutinous flour can be substituted. Knead 1⅔  cup glutinous flour with 1 cup water and cool as fresh batter.

Note : Put the desiccated coconut in a one-quart container, cover and cook at High for 1 minute to be kept longer.
