Stuffed Egg Rolls

4 eggs
1 tablespoon lime juice
2 pairs chinese sausages
cups minced pork
cups minced shrimps
1 tablespoon ground garlic and pepper
1 tablespoon light soy sauce
1 teaspoon Maggi sauce
1 tablespoon fish sauce
½ teaspoon castor sugar
1 tablespoon chopped coriander stalk
¼ cup cooking oil

Knead together minced pork, minced shrimps, ground garlic and pepper. Season to taste with the sauces, sugar and coriander, mix well, set aside. Heat the 7 “x 7” browning skillet in microwave oven at High (600-700 Watts) for 3 minutes. During this time beat eggs and lime juice. Grease the skillet with cooking oil. Pour the beaten eggs into the skillet and spread thinly, turn the egg sheet up-side down. Do the same for the other 3 sheets but heat the skillet during the addition for only 2 minutes. Spread one-forth of pork mixture on the egg sheet, place one of chinese sausage in the middle of the pork mixture. Roll up tightly. Arrange the egg rolls in a square shallow container. Cook, covered, at High for 3 minutes. Slice and arrange on a serving plate. Serve with mild chilli sauce.
