Steamed Spareribs with Fermented Soy Beans


200 grams spareribs, cut into small section
¼ cup water
2 red chillies, seeded, coarsely chopped
1 tablespoon fermented soy beans, coarsely chopped
¼ teaspoon salt
1 teaspoon castor sugar
½ teaspoon black soy sauce
½ teaspoon cornflour

Mix well chillies, fermented soybean, salt, sugar, black soy sauce and water in a 1-cup glass measure. Put spareribs into microwave pressure cooker, pour the seasoning mixture over the spareribs and toss well. Cook, covered, at High (600-700 Watts) for 12 minutes. Rest for 10 minutes or until the pressure inside the cooker is reduced, open the cooker safely. Remove the spareribs and arrange on a serving plate. Dissolve cornflour in the sauce left in the cooker. Microwave, covered, at High for 1 minute, remove from the oven and pour the sauce over the spareribs. Garnish with coriander leaves. (for 2 servings).
