Combine water and lemon juice in a one cup measure. Beat eggs and sugar in a medium mixing bowl with an electric mixer until fluffy. During this time gradually pour lemon juice mixture into the egg bowl and beat the mixture to soft peak. Fold in flour, vanilla and food colour. Line the muffin pan with paper cups. Spoon the batter in the paper cups, covered and microwave at High (600-700 watts) for 4½ minutes. For medium oven, cook at High (500 Watts) for 5½ minutes.
