Mock Pomegranate Seeds

Ingredients

1 cup fresh water chestnuts, diced
¼ cup tapioca flour
3 tablespoons red syrup
1 cup medium syrup *
¾ cup coconut cream

Toss diced fresh water chestnuts in red syrup and coat well with tapioca flour. Pour 1% cup water into a 1-quart measure, cover tightly with microwave plastic wrap, boil at High (600-700 Watts) for 4 minutes. Add water chestnuts to boiling water and cook covered at High, for 1 minute. Drain and float in medium syrup. Serve with crushed ice in a small glass bowl, topped with coconut cream.

Note : 1 cup castor sugar and 1 cup water, boil at High for 4 minutes.
