Mock Fish and Turtle Egg in Sweet Cream Sauce, Pla Krim Kai Tao

Pla Krim (Mock Fish)

½ cup rice flour, sifted
cup water
1 tablespoon coconut cream
2 cups coconut milk
½ teaspoon salt

Blend rice flour and water in a small mixing bowl. Cook covered, at Defrost (200 Watts) for 2½ minutes. Stir once and cook, covered, at High (600-700 Watts) for 1 minute. Leave until not too hot. Knead in 1 tablespoon coconut cream. Make the dough into a small fish shape about 2″ long. Put coconut milk and salt in a 2-quart container, covered, cook at High for 5 minutes. Add Pla Krim to the container and cook, covered, at High for 2 minutes.

Kai Tao (Mock Turtle Egg)

½ cup rice flour, sifted
cup water
1 tablespoon palm sugar*
1 tablespoon coconut cream
2 cups coconut milk
½ cup palm sugar

Do the same process as Pla Krim but add palm sugar both in batter and in the coconut milk instead of salt. Serve by spooning Kai Tao (red one) into a serving dish first and then top with Pla Krim (white one). (for 6 servings)

Note : Palm sugar : This tasty brown sugar is extracted from the sap of palm trees. It can be replaced by other brown sugars.
