Mango Sweet Sheets

Ingredients

3 ripe mangoes
teaspoon salt

Peel mangoes, cut the meat and extract the juice with an electric juice extractor to produce 2 cups liquid. Blend well mango juice and salt in a medium bowl. Microwave, uncovered, at High (600-700 Watts) for 15-17 minutes. Stir 2-3 times during this time. Spread the mango paste on a round cut banana leaf or plastic wrap thinly. Dry in the sun and turn up-side down to have the mango sheets dried both sides. They are a very good preserved fruit and can be kept for a long time.
