Glutinous Rice Dumplings in Bamboo leaves, Ba Jang


3 cups soaked glutinous rice
½ cup 1″x 1″ squares pork
¼ cup dried shrimps, rinse and drain
½ cup cooked peanuts
2 teaspoons salt
2 teaspoons castor sugar
1 tablespoon ground garlic
1 teaspoon ground pepper
2 Chinese black mushroom, soften and shredded
2 cups water
4 salty yolks
8 pieces dry bamboo leaves

Put Chinese black mushroom and cooking oil in a 2-quart container, together with garlic and pepper. Stir fry in Microwave oven, uncovered, at High (600-700 Watts) for 2 minutes until aromatic. Remove from the oven, stir in glutinous rice pork, dried shrimp, peanuts and sugar. Pour water into the glutinous container, covered, and microwave, at High for 16 minutes. Soften dry bamboo leaves by soaking in warm water. Use two pieces of bamboo leaves. Place one on top of the other and form into cone. Line salty yolk at the bottom and spoon cooked sticky rice on the yolk. Fold long edges of leave over to enclose. Wrap up into pyramid and tie up with strings. Repeat with the rest of the ingredients. Put 2 pieces of rice dumplings in the microwave steamer. Pour the boiling water in the bowl of the steamer, covered, and microwave at High for 4 minutes.
