Glutinous Cake Chinese Style, Khanom Keng

“Khanom” is dessert, and “Keng” is a kind of Chinese container made of bamboo. Making this kind of Chinese dessert, dried leave containers are used and “Keng” is used as a supporter of dried leave container.

1 Kilogram glutinous flour
3 cups water
3 cups palm sugar or castor sugar
2 cups desiccated coconut
24 2½” diameter dried banana leaves

Knead well glutinous flour and water in a large mixing bowl. Add sugar and desiccated coconut to the bowl and knead thoroughly. Coat the inner side of dried banana leave containers with cooking oil. Spoon 3 tablespoons of glutinous mixture into each of dried banana leave containers. Place the 6 containers on a cup-cake mold. Cover tightly with microwave plastic wrap and steam at High (600-700 Watts) for 4½ minutes.
