German Chocolate Cake


¼ cup butter
cup brown sugar
cup roasted, grated coconut
cup coarsely chopped cashew nuts
¾ cup plain flour
2 tablespoons cocoa powder
1 teaspoon baking powder
½ teaspoon salt
½ cup shortening, softened
½ cup castor sugar
2 eggs
¼ cup milk
1 teaspoon vanilla essence

Melt butter in a 9″ plastic cake mold in microwave oven at High (600-700 Watts) for ½ minute. Spread brown sugar, coconut and cashew nuts all over the bottom of the cake mold. Sift all dry ingredients. Fit the metal blade to the food processor. Put softened shortening, sugar, eggs, milk and vanilla in a work bowl and process until well blended. Pour the batter into the prepared mold. Bake, uncovered, at High for 4 minutes. Stand for 2 minutes and remove the cake from the mold.
