Dates Nut Cake
Cake Mixture

½ cup dates, stoned and cut into 4 pieces
cup water
1 teaspoon molasses
½ teaspoon baking soda
½ cup shortening
2  eggs
cup castor sugar
1 cup plain flour
½ teaspoon salt
¼ cup coarsely chopped cashew nuts

Sieve all dry ingredients. Put date, water and molasses in a 1-quart measure, cover tightly with plastic wrap and microwave at high (600-700 Watts) for ½ minute. Add the baking soda to the date mixture and pour into the bowl of a food processor with a metal blade. Put eggs, shortening and sugar into the work bowl and blend well. Add dry ingredients to the bowl and pulse to mix. Pour the batter into a tube mold. Microwave at High for 6 minutes. Frost with brown butter frosting.

Brown Butter Frosting

3 tablespoons butter
2 cups icing sugar
3 tablespoons milk
¼ teaspoon vanilla essence

Brown butter in a medium size mixing bowl in microwave oven at High for 3-5 minutes. Add icing sugar and beat well with egg beater, blend in milk and vanilla essence.
