Chilli Dip Northern Style

Rinse and drain prik noom and eggplants. Cut eggplants into sections. Arrange in an oblong container. Cook covered at High (600-700 Watts) for 6 minutes. Remove eggplants, soak in cold water and drain. Spoon the meat out of the skin. Roast shallots, garlic on a plate, uncovered, at High (600-700 Watts) for 2 minutes and 2½ minutes respectively. Put eggplant meat, shallots, garlic and Prik noom in the food processor bowl, mix well and pour the mixture into a 1-quart container, season with fish sauce, lime juice and stock. Stir in cooking oil, microwave, uncovered, at High (600-700 Watts) for 2 minutes. Serve with boiled eggs and fresh vegetables.
