Breadfruit Baked Custard


250 grams breadfruit *
6 eggs
1 cup coconut cream
½ cup palm sugar
½ cup castor sugar
½ cup rice flour
¼ cup fried shallot

Put pieces of breadfruit in a shallow container. Cook, covered, at High (600-700 Watts) for 10 minutes. Leave to cool and into a work bowl of food processor. Use metal blade, process until finely minced. Add all ingredients except fried shallot to the work bowl. Blend well and pour into a 2-quart container. Microwave, uncovered, at High for 6 minutes. Stir vigorously and pour into a 5″x8″ container. Flatten the top with spatula. Microwave at High for 2 minutes. Use Grill to brown the top for 6 minutes, sprinkle fried shallot on top.

Note : Breadfruit : Artocarpus altilis (park) Forberg, large fruit of a south-east Asian and Pacific evergreen tree. Individual fruits measure up to 20 cm. (8 inch) in diameter and contain starchy white pulp.
