I love this recipe because it is just as simple as defrosting a chicken pot pie, but it tastes so much better than anything frozen! You can get creative with your add ins too, use left over chicken or vegetables as delicious fillers.

I like to use this recipe on nights when I want a hearty and homey meal, but do not want to take the time to turn on the oven and make everything from scratch.

Ingredients

  • 1 can of cream of chicken soup
  • 3 tbsp of shredded or cubed rotisserie chicken
  • 3 tbsp of peas and carrots (frozen)
  • small can of crescent roll dough
  • salt and pepper

How to Make Chicken Pot Pie in the Microwave – Step by Step

  1. In a microwave safe mug, combine cream of chicken, rotisserie chicken, vegetables, and salt and pepper, stir; microwave on high for 1 minute
  2. Remove from microwave, layer 3 raw crescent rolls, place them over the heated filling to make a crust (use a fork to push down edges), and poke a hole for air to vent out of; microwave on high for 2 minutes or until crust is a golden brown, enjoy!
