I love this recipe because it is fast and simple. The only preparation required is poking holes in the sweet potato. But my favorite thing about this recipe is that the toppings you choose for your sweet potato can be as simple or as loaded as you want.

If you have a picky eater in the house, no problem! They can top their sweet potato with a simple butter, maple syrup, and cinnamon combination while you load yours with all kinds of Mexican inspired ingredients.

How to Make a Sweet Potato in the Microwave – Step by Step

  1. Use a fork to poke holes in sweet potato

2. Microwave for about 7 minutes (time may vary depending on size of sweet potato)

3. Remove from microwave, poke with a fork to check if it’s cooked through (almost cooked through, but still some raw parts in this potato)

4. If sweet potato is still raw, rotate and continue to microwave in 1 minute intervals

5. Check with a fork again to see if sweet potato is cooked through (now that’s cooked all the way through!)

5. Cut sweet potato in half and fluff using a fork

6. Variation One: Scoop black beans and tomatoes onto both halves of sweet potato, sprinkle with cheese, and top with sour cream, avocado slices and cilantro, enjoy!

7. Variation Two: Place a square of butter on either half of potato, drizzle with maple syrup, sprinkle with cinnamon and enjoy!
