Quiche in a Mug

You can’t skip breakfast! Breakfast is the most important meal of the day. This quiche in a mug recipe is perfect for when you need to get out of the ASAP but don’t want to skip your morning meal.

Quiche is the perfect protein packed morning meal to start your day off with. This recipe is so simple and fast, you will have a delicious quiche in no time!

When I first made this quiche in a mug, there was not an explosion, but I could see the eggs puffing over the rim of my mug while microwaving. So, I would suggest placing a small plate on top of the mug before you begin microwaving your quiche.

This recipe varies slightly from my scrambled egg recipe, in this recipe, you do not need to “scramble” the eggs and it is full of veggies (and more protein if you like).

  • You can take it out of the microwave and directly out the door in the morning

Ingredients

  • 1 tbsp of butter
  • 1 egg
  • 1/2 cup of whole milk
  • 2 tbsp chopped tomato
  • 1/2 cup of fresh spinach
  • 1/2 cup of grated cheese (your choice)
  • Salt and pepper

How to Make a Microwave a Quiche in a Mug – Step by Step

  1. In a mug, whisk together butter, egg and milk

2. Add in tomatoes, spinach, and cheese (you can add ham, bacon, mushrooms, whatever you want here), sprinkle in salt and pepper, stir

3. Microwave on high for one minute, or until the egg is puffed

4. Top with chopped green onion and extra tomatoes, enjoy!

What Other Ingredients Taste Good Together in a Quiche?

Other quiche combos that are delicious include:

  • Red bell pepper, onion, parsley, and cheddar cheese
  • Bacon, asparagus, and mozzarella cheese
  • Zucchini, mushroom, garlic, feta cheese

Prep the Night Before!

This recipe is a great to-go meal and you can minimize the time it takes to make this mug meal by preparing everything the night before.

On the nights that you know you will be in a hurry in the morning, take five minutes to chop up your veggies, toss your choice of protein into your mug, whisk and egg in, and cover it up to be microwaved and taken out the door in the morning.

Can I Make This Recipe for Two?

Yes, of course! Just double or triple, the recipe above and use a microwave. safe bowl. Be sure to place a plate on top of your bowl so the eggs don’t fluff up and over the side of the bowl. Microwave for 2 minutes, remove and check, continue to microwave in one minute intervals until eggs fluff.
